Baked Parmesan Potato Wedges
Ingredients:
- russet potatoes - 4
- extra virgin olive oil - 1/4 cup
- sea salt OR Kosher salt - 1/4 tsp
- garlic powder - 1/4 tsp
- paprika - 1/4 tsp
- black pepper - 1/4 tsp
- chopped fresh parsley leaves - 2 T
- parmesan cheese - 1/4 cup
Instructions:
Wash & cut potatoes into wedges. Place potatoes in a bowl of ice water for 30 minutes then; pat dry with paper towels.
In a large zip lock bag, combine salt, garlic powder, paprika and black pepper. Add potatoes and shake them together. Add olive oil to the bag and toss until potatoes are coated.
Place potatoes on a baking sheet lined with parchment paper.
Bake in a preheated 450 degree oven for 30 - 35 min until the potatoes are thoroughly cooked, browned and crispy.
In a bowl, combine parsley and parmesan cheese and toss with potato wedges.
Serve with ranch dressing, ketchup, etc.
