Buttermilk Onion Rings
Ingredients:
- sweet onion, cut into 1/4 inch rings - 1
- buttermilk - 1 1/2 c
- sea salt - 1/2 t
- hot sauce - 4 T
- flour - 2 c
- sea salt - 1 t
- garlic powder - 1/2 t
- freshly ground pepper - 1/2 t
- vegetable oil -
- Greek yogurt - 1/4 c
- mayonnaise - 1/4 c
- garlic clove, minced - 1
- salt and pepper - pinch
- lemon juice - 1 t
- dill, minced - 1 t
- chives, minced - 1 t
- Italian parsley, minced - 1 T
- buttermilk - 3 T
Instructions:
Place onion slices in a bowl, toss with salt and hot sauce. Pour in the buttermilk, submerge the onions in the buttermilk/hot sauce mixture. Soak onions in the buttermilk for 15 minutes.
In another bowl, mix flour, salt, garlic powder and pepper together.
Line a baking sheet with paper towels. Heat oil to 360 degrees. While the oil is heating up, prepare ranch dipping sauce --
In a bowl, thoroughly combine yogurt, mayonnaise, salt, pepper, lemon juice and herbs. Add 1 - 2 T buttermilk and stir, until you reach your desired consistency; set aside.
When oil is hot, remove onions from the buttermilk and dredge both sides of the onions in the flour mixture until coated. Gently place onions in the hot oil, fry until light brown on both sides, about 3 minutes, turning them once. Place onion rings on paper towels to drain.
Recipe can be doubled. To keep onions warm place in a preheated 200 degree oven.
