Cauliflower and Cheese
Ingredients:
- cauliflower, broken into pieces - 1 head
- flour - 1/3 cup
- butter - 2 T
- dry mustard, optional - 1 t
- milk - 2 cups
- shredded cheddar OR American cheese - 2 cups
- salt and pepper -
Instructions:
Cook cauliflower in boiling salt water for 7 – 8 minutes, until just tender, drain well. In a saucepan combine flour, butter, mustard and milk, stirring constantly bring to a boil, until smooth and thickened. Stir in 1 cup cheese until it melts. Place cauliflower in a buttered casserole dish, pour cheese sauce over cauliflower, sprinkle 1 cup cheese over top. Place under a preheated medium hot broiler for 3–4 minutes, until golden OR bake in a preheated 400 degree oven for 10 - 12 minutes until golden.
