1 large head cauliflower
4 ounces cream cheese
1/2 c sour cream
1/4 c minced chives or green onions
1/3 c freshly grated Parmesan cheese
1/3 c crispy , crumbled bacon
1 c sharp cheddar cheese
Set aside a small amount of chives and bacon for garnish. Cut cauliflower into small pieces, cook in boiling salted water until tender but not soft. Drain well and mash, leaving some chunks.
Mix in cream cheese, sour cream, chives, Parmesan and bacon. Spread in a glass casserole dish. Sprinkle cheddar cheese over top. Bake in a preheated 350 degree oven for 30 – 35 minutes, until hot and bubbly.
Garnish with reserved chives and bacon.
