Cheese and Corn Bake
Ingredients:
- eggs - 2
- sour cream - 12 ounces
- corn, fresh OR frozen - 2 cups
- Monterey Jack cheese, cubed - 8 ounces
- soft bread crumbs - 1/2 cup
- pepper - 1/4 tsp
- shredded cheddar cheese - 1/2 cup
Instructions:
In large bowl, combine eggs and sour cream. Add corn, cheese, bread crumbs and pepper; mix well. Pour into a greased shallow 1-1/2 quart baking dish.
Bake, uncovered in a preheated 350 degree oven for 35 minutes. Sprinkle with cheddar cheese; bake another 5 - 10 minutes longer or until knife inserted near the center comes out clean.
Let stand for 5 minutes before serving.
