Cheese Ranch Potatoes
Ingredients:
- potatoes, washed, cut into chunks - 2 pounds
- Ranch Dressing (bottled dressing) - 1/2 cup
- shredded cheddar cheese - 1/4 cup plus more for topping
- crumbled, cooked bacon - 1/4 cup
- dried dill weed - 1 T
- scallions, washed, chopped - 3
- salt and pepper - to desired taste
Instructions:
In a bowl, combine ranch dressing, dill, cheese and bacon, stir in potatoes. Sprinkle with salt and pepper. Toss to coat potatoes. Spread into a greased 13 x 9 inch baking dish. Cover with foil.
Bake in a preheated 350 degree oven for 60 minutes. Gently stir halfway through baking.
Remove foil. Raise oven temperature to 400 degrees. Gently stir again.
Bake for an another 15 minutes, if desired sprinkle more cheese over top. Bake a few more minutes or until cheese is melted, browned and bubbly on top.
Sprinkle scallions over top. Serve hot.
