Cheesy Scalloped Potatoes
Ingredients:
- butter - 1 T
- olive oil - 1 T
- medium onion, diced - 1
- flour - 2 T
- skim milk - 1 3/4 c
- heavy cream - 1/4 c
- cloves garlic - 2
- shredded cheese, cheddar or blend of cheddar, mozzarella - 3 c
- chives, snipped - 1/3 c
- nutmeg - 1 t
- medium potatoes, sliced thin - 6
Instructions:
In a saucepan over medium heat melt butter and olive oil, add the onion and cook until soft. Stir in the garlic, cook another minute. Thoroughly mix the flour into the onions and add milk, cream, stir over medium heat until it begins to bubble and thicken. Remove it from the heat and mix in 2 c cheese; set aside.
Layer ingredients in a 11 x 13 inch baking dish with coated with butter in a single layer of potato slices, then chives, nutmeg, some of the sauce. Continue layering until potatoes are used and sauce is gone. Sprinkle top with 1 c cheese, a sprinkling of chives and nutmeg. Bake in a preheated 350 oven for 60 minutes until brown.
