Chicken Zucchini Fritters
Ingredients:
- zucchini, grated - 2 medium (1 1/4 pounds)
- salt, divided - 2 t
- ground chicken OR turkey - 1 pound
- freshly cracked black pepper - 1/4 t
- green onions, finely sliced - 1/4 cup
- egg - 1
- garlic, pressed - 2 cloves
- ricotta cheese - 8 ounces
- olive oil - for saute
Instructions:
Place zucchini in a colander, sprinkle 1 t salt over zucchini, let stand for 10 minutes. Squeeze as much juice as you can from zucchini, place zucchini in a bowl, discard drained juice. Add chicken, 1 t salt, pepper, onion, egg, garlic and cheese, mix throughly.
Heat 3 - 4 T olive oil in a skillet over medium heat. Take a heaping tablespoon of the mixture and form into round patties about 1/ 3 inch thick. Cook uncovered for 3 minutes, flip over, cover skillet and cook for another 3 - 4 minutes, until cooked through. If needed add additional oil to the pan.
