Corn Casserole
Ingredients:
- bacon, diced - 1/2 pound
- chopped green bell pepper - 1/4 cup
- chopped onion - 1/4 cup
- whole kernel corn - 15 ounce can
- cream style corn - 15 ounce can
- sugar - 1 T
- eggs, beaten - 2
- cornstarch - 2 T
Instructions:
In a skillet, cook bacon until crisp; remove; set aside. Reserve 1 T bacon drippings; set aside. Add green pepper and onion, saute over medium heat until tender, about 5 minutes. In a bowl, combine both cans of corn, sugar, eggs, cornstarch, bacon and 2 T bread crumbs; stir in pepper onion mixture. Pour into a greased casserole dish. In a bowl, mix together 1/3 cup bread crumbs and 1 T bacon drippings. Sprinkle over casserole. Bake in a preheated 350 degree oven for 45 - 50 minutes, or until golden and set.
