Corn Custard
Ingredients:
- heavy cream - 1 1/4 c
- milk - 1 c
- grated smoked Gouda cheese - 1 3/4 c
- fresh bread crumbs - 1 c
- egg yolks - 3
- fresh corn kernals - 1 c (about 2 ears)
- salt - 1 t
- black pepper - 1/2 t
Instructions:
In a sauce pan over medium heat, heat cream and milk until simmering. Reduce heat to low, stir in 1 1/2 c cheese until melted, add bread crumbs. Remove from heat, let cool for 10 minutes. Whisk in egg yolks, 3/4 c corn, salt and pepper.
Pour custard into a buttered 7 x 10 1/2 inch dish; top with 1/4 c corn and 1/4 c cheese. Place dish in a large roasting pan, pour 1 inch hot water into roasting pan, bake in a preheated 300 degree oven until custard sets; about 1 1/4 hours.
