Corn Fritters
Ingredients:
- egg, beaten - 1
- milk - 1/2 cup
- sugar - 1 T
- sifted flour - 1 1/2 cups
- baking powder - 2 t
- salt - 1 t
- pepper - dash
- butter OR margarine, melted - 1 T
- whole kernal corn, cooked - 1 cup
- oil - for frying
Instructions:
In a bowl, beat egg, milk and sugar together. Sift dry ingredients and add to the egg mixture.
Add butter and stir briskly by hand until well blended. Fold in corn until evenly mixed.
Heat oil to 375 degrees; drop by T into oil and cook until golden brown on both sides. Drain on paper towels. Place on a plate and dust with powdered sugar. If desired serve with maple syrup.
HINT -- Fry one fritter then slice in half, if oil is bubbling through the fritter, the fritter will be too greasy, add a little more flour to the batter.
