Creamy Cauliflower
Ingredients:
- Kosher salt - to desired taste
- cauliflower, cut into small florets - 1 head
- olive oil -
- heavy cream - 1 cup
- cream cheese, cut into small pieces - 2 ounces
- Dijon mustard - 1 1/2 tsp
- shredded sharp cheddar cheese - 1 1/2 cups
- fresh ground black pepper - 1/4 tsp
- garlic powder - 1/8 tsp
Instructions:
Bring a large pot of water, seasoned with salt to a boil. Place cauliflower in boiling water, cook until crisp tender, about 5 minutes. Drain well, pat dry. Place cauliflower in casserole dish that has been coated with olive oil; set aside.
In a saucepan, bring cream to a simmer; whisk in cream cheese and mustard until smooth. Stir in 1 c cheese, salt, pepper and garlic; whisk just until cheese melts, 1 - 2 minutes. Remove from heat, pour over the cauliflower; stir to combine. Top with 1/2 cup cheese and bake in a preheated 375 degree oven for 15 - 20 minutes until browned.
Let sit for 5 minutes and serve.
