Creamy Potatoes
Ingredients:
- potatoes cut into thin french fries - 5 large or enough to fill a 13 x 9 inch baking pan
- whipping cream - 1 pint
- salt and pepper -
- parsley flakes - 2 t
- grated cheddar cheese - 2 cups
Instructions:
Lay potato strips, in a 13 x 9 inch glass pan. Pour cream over the potatoes. Generously salt and pepper potatoes. Sprinkle cheese over the top. Sprinkle parsley over the cheese.
Coat foil with cooking spray on the side of the foil that will face the cheese. Cover pan with foil, poke 2 or 3 holes in the foil, to allow a little steam to escape. Place potatoes in the middle of the oven. Bake in a preheated 400 degree oven for 1 hour, 15 minutes, or until potatoes are tender. During the last 15 or 20 minutes of baking, lower oven rack. This will make the bottom of the potatoes, brown and crispy. Remove potatoes from oven, remove foil, serve.
