Fried Corn Fritters
Ingredients:
- yellow cornmeal - 1/3 cup
- flour - 1/4 cup
- baking soda - 1/2 tsp
- Kosher salt - 1 tsp to desired taste
- black pepper - 1/2 tsp
- parsley, finely chopped - handful
- milk - 1/3 cup
- grilled corn or regular corn - 2 cups
- vegetable oil - for frying
Instructions:
In a bowl, whisk together cornmeal, flour, baking powder, salt, pepper and parsley. Add milk, mix together with a wooden spoon until thick and thoroughly mixed through. Add corn, mix until all the kernels are well-coated.
Heat a little oil in a skillet over medium high heat.
Place 1/3 cup of mixture in the skillet, gently pressing the mound down to flatten. Cook for 5 minutes per side, until browned. Serve immediately.
