Fully Loaded Baked Potato Salad
Ingredients:
- Russet potatoes - 8 medium
- sour cream - 1 cup
- mayonnaise - 1/2 cup
- bacon, cooked, crumbled - 1 package
- onion, chopped - 1 small
- chives - to desired taste
- shredded Cheddar cheese - 1 1/2 cups
- salt and pepper - to desired taste
- shredded Cheddar cheese, chives, crumbled bacon - garnish to desired taste
Instructions:
Peel and cut potatoes into bite sized pieces. Place in saucepan cover with water and boil until fork tender, about 20 - 25 minutes. DO NOT overcook. Drain and cool the potatoes, then place in refrigerator to thoroughly chill.
In a bowl, mix together mayonnaise and sour cream. Add to the potatoes, then add onions, chives, 1 1/2 cups cheese, salt and pepper. Garnish with extra shredded cheese, chives and cooked crumbled bacon. Serve.
