Garlic Baked Potatoes
Ingredients:
- small - medium potatoes, equal size - 1 1/2 pounds
- garlic powder - 1/4 - 1/2 tsp
- chicken OR vegetable broth - 1 can
- butter -
- minced parsley - for garnish
- salt and pepper - to desired taste
Instructions:
Peel and wash (EVEN-SIZED) potatoes; place in a round baking pan, fit snuggly together.
In a saucepan, heat together broth and garlic; pour hot broth over potatoes to a depth of 1 inch of broth; sprinkle salt and pepper over the top of the potatoes. Place a small slice of butter (1/2 tsp or so) on top of each potato.
Bake in a preheated 350 degree oven for 35 - 40 minutes or until desired doneless. (If desired, bake another 10 minutes or so for bottom of potatoes to get crunchy). Sprinkle potatoes with parsley. If desired, squeeze lime or lemon juice over potatoes.
