Garlic Mashed Potatoes
Ingredients:
- red potatoes, quartered, skin left on - 8 small
- Kosher salt, divided - 1 1/2 tsp
- fresh ground black pepper - 1/4 tsp
- garlic powder - 1 tsp
- sour cream - 1/2 cup
- grated Parmesan cheese - 1/2 cup
- butter, cut into pieces - 1/4 cup
Instructions:
Place potatoes in a pan, cover potatoes with water, add 1 t Kosher salt. Boil until they can easily be pierced with a paring knife. Remove from heat and drain.
In a bowl, combine 1/2 t Kosher salt, pepper, garlic powder, sour cream, Parmesan cheese and butter. Add potatoes mix on medium speed until mostly smooth. Some lumps are ok. Serve
