Garlic Parmesan Potatoes
Ingredients:
- baby Dutch yellow potatoes, cut in half - 3 pounds
- olive oil - 2 T
- butter - 2 T
- garlic, minced - 4 cloves
- dried oregano - 1/2 tsp
- dried basil - 1/2 tsp
- dried dill - 1/2 tsp
- Kosher salt and fresh ground black pepper - to desired taste
- fresh grated Parmesan cheese - 1/4 cup
- chopped fresh parsley leaves - 2 T
Instructions:
Lightly coat the inside of a slow cooker with nonstick spray. Place potatoes, olive oil, butter, garlic, oregano, basil and dill into the slow cooker; season with salt and pepper.
Cover, cook on low heat for 4 - 5 hours or high heat for 2 - 3 hours, or until tender.
Serve immediately, sprinkle Parmesan cheese and parsley over top.
