Green Beans with Bacon
Ingredients:
- green beans, trimmed - 2 pounds
- pecan pieces - 1/2 cup
- butter - 2 T
- onion, chopped - 1 medium
- brown sugar - 1/4 cup
- bacon, cut into 1 inch pieces - 8 slices
Instructions:
In dry non-stick skillet toast pecans for 2 - 3 minutes over medium heat until lightly browned; stir frequently. Remove from skillet; set aside. Add butter to skillet, melt, add onion. Cook, stir occasionally until tender and translucent.
In a second skillet fry bacon until done and beginning to crisp. Remove from skillet, drain on paper towel. Bring water to boil in large pot, add beans, cook until crisp tender, about 5 minutes. Drain immediately. When onions have finished cooking, add brown sugar, pecans and bacon. Stir gently until well mixed and coated. Add beans and heat thoroughly. Serve hot.
