Grilled Zucchini
Ingredients:
- zucchini - 6 medium
- olive oil - 1/4 cup
- Kosher salt - 1 tsp
- pepper - 1 tsp
- lemons and zest - 3 (zest from 3 lemons, juice from 2 lemons)
- Kosher salt - 1 tsp
- olive oil - for brushing if needed
Instructions:
Cut the tops and bottoms off of the zucchini, slice lengthwise into quarters. Place zucchini strips in a very large plastic zipper bag. Drizzle in 1/4 cup olive oil, 1 tsp salt, pepper, 1 T lemon zest and the juice of 2 lemons. Seal the bag, turn bag several times to coat zucchini; set aside for 15 - 20 minutes to marinate.
Heat grill to medium - medium-low heat. Grill zucchini on all sides until tender, being careful not to burn them. Place zucchini to serving plate.
Combine remaining lemon zest and 1 T kosher salt (or more to desired taste) on top. With a knife chop salt and zest together. Sprinkle lemon salt over grilled zucchini; serve.
