Hasselback Potatoes
Ingredients:
- potatoes - 6 medium
- garlic, sliced thin - 2 - 3 cloves
- olive oil - 2 T
- butter - 2 1/2 T
- sea salt -
- fresh ground black pepper -
Instructions:
Wash and dry potatoes, lay potatoes flat side down on cutting board. Slice potatoes at 1/4 inch intervals, leaving the bottom of the potato intact.
Place potatoes in a baking pan, insert garlic in between the slits. Scatter butter on top of each potato. Drizzle olive oil over top, season with salt and pepper.
Bake in a preheated 425 degree oven for 40 minutes or until potatoes turn crispy and flesh is soft.
