Herb Baked Potatoes
Ingredients:
- baking potatoes - 4
- butter, melted - 1/4 cup
- coarse sea salt - 1 tsp
- dried herbs of choice basil, thyme, chives, Italian seasoning, etc - 2 - 3 tsp
- fresh grated Pamesan or cheese of choice - 1/4 cup
Instructions:
Wash and dry potatoes; peel if desired. Cut into thin slices, but not all the way through the potato. Place potatoes in a baking dish. Pour butter over potatoes; sprinkle salt and herbs over potatoes, making sure you get spices between each slice.
Bake in a preheated 400 degree oven for 45 minutes, until potatoes are cooked through. Spoon melted butter from the bottom of the pan over potatoes half way through baking. Top with cheese and bake another 10 minutes.
