Irish Mash Potatoes
Ingredients:
- Russet potatoes, peeled, cubed - 5 large
- Irish bacon, cook, crumbled - 4 thick cut
- butter - 1 T
- chopped chives - 3 T
- onion, finely chopped - 1 small
- salt - to desired taste
- milk - as needed
Instructions:
Boil potatoes in salted water until fork-tender, about 12 minutes. Drain potatoes, return potatoes to the pan.
Add bacon, butter, chives and onion; beat together using a hand mixer. Season with salt to desired taste. Slowly add milk while blending, until desired consistency is reached; serve hot.
