Latkes with Sour Cream
Ingredients:
- potatoes, peeled, grated, squeezed dry - 1 pound
- onion, grated, squeezed dry - 1
- flour - 1 T
- egg, beaten - 1
- salt - 3/4 tsp
- black pepper - 1/4 tsp
- sunflower oil - 2 T
- sour cream - 1/2 cup
- apple sauce - 1/2 cup
- finely chopped chives - 2 T
Instructions:
In a bowl, mix together potatoes, onion, flour, egg, salt and pepper.
In a skillet, heat sunflower oil over medium heat. Place heaping teaspoonfuls of mixture into the hot oil. Fatten them into thin pancakes. Cook, until crisp, flip, cook until golden on each side. Drain on paper towels.
Cool slightly, top each latke with 1 tsp each sour cream and 1 tsp apple sauce. Garnish with chives.
