Margarita Spaghetti Squash
Ingredients:
- spaghetti squash - 1 large
- olive oil - 2 T
- Roma tomato, finely chopped - 1 large
- finely chopped fresh basil - 2 T
- shredded Mozzarella cheese - 1/4 cup
- salt and pepper - 1 t each
- garlic powder - 1 t
Instructions:
Slice squash in half lengthwise, remove seeds and center strings. Drizzle with olive oil, sprinkle with salt, pepper and garlic powder. Place squash, cut side down on a cookie sheet, bake in a preheated 400 degree oven for 30 minutes or until squash is soft and easily comes up with a fork into a spaghetti like texture. Remove from oven, scrape and fluff the stringy squash with a fork. Leave the squash in the skin. Place tomatoes and basil in squash, stir and sprinkle mozzarella cheese over top. Place under broiler for 3 - 4 minutes, until cheese is melted and slightly browned. Cool for 5 minutes and serve.
