Marinated Tomatoes
Ingredients:
- extra virgin olive oil - 1/2 cup
- balsamic vinegar - 2 T
- sugar - 2 T
- salt - 1 t
- freshly ground pepper - to desired taste
- parsley, chopped - 1/4 cup
- basil leaves, sliced very thinly - 10
- ground thyme - 1/8 t
- garlic, minced - 2 cloves
- bite size tomatoes, halved (campari, cherry, grape, etc) - 2 pounds
Instructions:
In a bowl whisk together all ingredients except tomatoes. Add tomatoes and toss well. Let tomatoes marinate at room temperature for a few hours. (Place in refrigerator if you prefer tomatoes cold.) Tomatoes will create their own marinade as they rest.
