Mashed Potato Bacon Balls
Ingredients:
- cold mashed potatoes - 2 cups
- egg, lightly beaten - 1
- shredded cheddar cheese - 3/4 cup
- chopped green onions - 1/2 cup
- real bacon bits - 1/4 cup
- dry bread crumgs - 1/2 cup
- oil - for frying
Instructions:
Let potatoes set at room temperature for 30 minutes. Stir in egg, cheese, onions and bacon bits. Shape into 1 inch balls; roll in bread crumbs. Let set for 15 minutes.
In a skillet, heat 1 inch of oil to 375 degrees. Fry a few potato balls at a time, for 2 1/2 - 3 minutes or until golden brown. Remove, place on paper towel to drain.
