Mashed Potato Balls
Ingredients:
- garlic roasted mashed potatoes - 1 package
- bacon, fried, crumbled - 3 slices
- shredded cheddar cheese - 3/4 cup
- egg - 1
- snipped chives - 2 T
- Panko Bread Crumbs - 1 1/2 cups
- vegetable oil - 4 cups
Instructions:
Cook potatoes per package directions, cool to room temperature. In a bowl, combine potatoes, cheese, egg, chives and bacon. Roll into 1 inch balls and roll in the panko crumbs until completely covered. Place on a plate set aside for 15 minutes.
Heat oil, fry potato balls until golden; drain on paper towels. Garnish with chives; serve immediately.
