Mashed Potato Puffs
Ingredients:
- eggs - 2
- sour cream - 1/3 c
- sharp cheddar cheese, shredded - 1 c
- Parmesan, grated - 2 T
- chives, chopped - 2 T
- salt and pepper - to desired taste
- mashed potatoes - 3 c
Instructions:
In a bowl whisk eggs, whisk in sour cream, mix in cheeses and chives. If needed salt and pepper mashed potatoes, add to egg mixture; mix well. Spoon mixture just to the top of 8 - 9 buttered wells of a cupcake pan.
Bake in a preheated 400 degree oven for 25 - 35 minutes until they pull away from the sides of the pan and are golden brown. Remove from oven, cool in the pan for 5 minutes, remove and place them on a platter. Serve with sour cream.
