Mashed Potato Waffles
Ingredients:
- butter - 4 T
- buttermilk - 1/2 cup
- eggs - 2
- mashed potatoes - 2 cups
- chopped chives - 3 T
- flour - 1/2 cup
- baking powder - 1/2 tsp
- baking soda - 1/4 tsp
- salt - 1/2 tsp
- fresh ground black pepper - 1/2 tsp
- garlic powder - 1/4 tsp
- grated cheddar cheese - 1 cup
Instructions:
In a small saucepan, over medium-low heat melt butter. As the butter melts it will begin to crackle and pop. (That’s the water evaporating out of the butter.) Continue cooking butter until the crackling subsides and butter begins to brown a bit. (Butter will smell nutty.) Immediately place browned butter in a medium bowl. Whisk in buttermilk and eggs until thoroughly combined. Add potatoes and 2 T chives, gently stir to combine.
In a bowl, whisk together flour, baking powder, baking soda, salt, pepper and garlic powder. Add dry ingredients to wet ingredients. Using a spoon, mix until all of the flour is thoroughly combined. DO NOT overmix.
Place 1/4 cup potato mixture on a greased preheated waffle iron. Cook until golden. Remove, place on a wire rack to cool. (This keeps the waffles from getting soggy on the bottom.)
To serve -- place waffles on a baking sheet, sprinkle top with cheddar cheese. Place waffles under preheated broiler until cheese is melted, about 30 seconds to 1 minute. Remove, sprinkle 1 T chives over top. Serve warm with salsa.
