Melting Potatoes
Ingredients:
- Yukon Gold potatoes, peeled - 3 pounds
- butter, melted - 6 T
- chopped fresh thyme - 1 T
- salt - 1 tsp
- pepper - 1/2 tsp
- chicken broth - 1 1/4 cups
- garlic, crushed, peeled - 2 cloves
Instructions:
In a bowl, combine butter, thyme, salt and pepper. Square off ends of potatoes, slice into ¾ - 1 inch thick disks. Toss potatoes in butter mixture, place in a single layer in a 13 x 9 inch baking pan.
Have oven rack in the upper middle position of the oven. Roast potatoes in a preheated 500 degree oven for 15 minutes. Remove pan from oven, flip potatoes over. Return pan to the oven for 15 minutes. Remove pan from oven, flip potatoes again; add chicken broth and garlic. Return potatoes to the oven, bake for 15 minutes or until potatoes are tender. Baste potatoes with sauce; serve.
