Pickled Onions
Ingredients:
- vidalia onion - 4 c, thinly sliced
- apple cider or white vinegar - 1 1/2 c
- sugar - 1 c
- hot pepper sauce - 1 t
- Worcestershire sauce - 1 t
- mustard seed - 1 t
- celery seed - 1 t
- dry mustard - 2 t
- garlic powder - 1/4 t
- kosher salt - 1/2 t, to desired taste
- freshly ground black pepper - 1/4 - 1/2 t, to desired taste
- dill weed - 1/2 t
Instructions:
Slice onions in half then slice 1/4 inch thick. Place in a bowl and cover with ice water; for 30 minutes. Drain and place onions in a clean quart sized jar. In a bowl whisk remaining ingredients together until sugar is completely dissolved. Pour over the onions, tightly seal and place in refrigerator for 24 hours, if possible 3 or 4 days before using, the flavor enhances as they sit. Will keep refrigerated for 3 - 4 months.
To serve use as a garnish on salads, sandwiches, brats, hamburgers, hot dogs or chop and add to recipes.
