Potato Bites
Ingredients:
- frozen hash brown potatoes, thawed - 20 ounce bag
- egg - 1
- bacon - 5 slices
- shredded mexican cheddar cheese - 1 cup
- sour cream - 1/2 cup
Instructions:
In a skillet fry bacon, place on paper towels to soak up grease, cut into small pieces. In a large bowl combine potatoes, egg, sour cream, cheese and bacon. Shape into 1 1/2 inch size balls and place on a baking sheet lined with parchment paper or non stick foil. Bake in a preheated 425 degree oven for 25 minutes. Serve immediately.
