Potato, Cauliflower Bake
Ingredients:
- butter - 1/2 T
- Yukon Gold Potatoes, peeled, sliced 1/4 inch thick - 3 medium
- salt and pepper - to desired taste
- cauliflower, sliced 1/4 inch thick - 1/2 small head
- fresh thyme leaves, chopped - 2 t plus more for garnish
- shredded, sharp cheddar cheese - 3/4 cup
- milk or chicken broth - scant 1/4 cup
Instructions:
Place potatoes in large pan, cover with cold salted water. Bring water to a boil, add cauliflower cook for 8 minutes or until potatoes are just cooked and cauliflower is tender. Drain in colander, let sit for five minutes. Grease a large baking dish, place in layers - potato, cauliflower, thyme, salt, pepper and cheese, repeat for a second layer. Pour milk or broth over top and dot with butter. Garnish with thyme.
Bake in a preheated 450 degree oven for 10 - 15 minutes or until cheese is golden brown and bubbling.
