Potato Patties
Ingredients:
- cold mashed potatoes - 2 cups
- shredded cheddar cheese - 1 cup
- flour - 1/2 cup
- bacon - 6 strips
- onion, chopped - 1
- eggs, beaten - 2
- basil - 2 T
- parsley - 2 T
- garlic, chopped - 2 cloves
- salt - 1 tsp
- pepper - 1/2 tsp
Instructions:
In a skillet, fry bacon until crisp, drain on a paper towel. Break into small pieces; set aside. Remove all but 2 T bacon grease from the skillet, on medium heat cook garlic and onion until translucent.
Combine garlic, onions and bacon with remaining ingredients; blend well.
In a frying pan, melt 1 T margarine over medium heat. Take 1/4 cup of potato mixture, form into a ball. Place potato mixture in pan, flatten to 1/2 inch thickness.
Fry for 3 minutes on each side, until lightly golden brown. If needed add more margarine.
Serve hot. If desired top with sour cream. Goes great with ham.
