Praline Sweet Potatoes
Ingredients:
- mashed sweet potatoes - 4 cups
- sugar - 1/2 cup
- vanilla extract - 2 T
- eggs, beaten - 4
- heavy cream - 1/2 pint
- margarine, softened - 1/2 cup
- packed brown sugar - 1 cup
- flour - 1/2 cup
- chopped pecans - 1 1/4 cups
Instructions:
In a bowl, combine sweet potatoes, sugar, vanilla, eggs and cream. Blend well and spread evenly in a buttered 2 quart casserole dish.
Prepare topping -- in a bowl, combine margarine, brown sugar, flour and pecans. Mix until crumbly, sprinkle over sweet potato mixture. Bake in a preheated 350 degree oven for 30 minutes.
