Ranch Potatoes
Ingredients:
- Ranch dressing - 1/2 cup
- shredded cheddar cheese - 1/4 cup
- crumbled, cooked bacon - 1/4 cup
- dried dill weed - 1 T
- potatoes, do not peel, cut into chunks - 2 pounds
- shredded cheddar cheese - 1/3 cup to desired amount
- scallions or parsley - for garnish
- sour cream - for garnish
Instructions:
In a bowl, combine ranch dressing, dill, cheese and bacon. Add salt and pepper to taste. Add potatoes, stir to coat.
Pour into a greased 13 x 9 inch pan. Cover with foil. Bake in a preheated 350 degree oven for 60 minutes.
Stir gently after 30 minutes of baking, so the bottom potatoes don't burn, continue baking for 30 minutes, remove foil. Increase oven temperature to 400 degrees. Stir again, sprinkle 1/3 cup cheddar cheese over top.
Bake for an additional 15 minutes until brown and bubbly on top. Garnish with scallions or parsley and sour cream.
