Ranch Potatoes
Ingredients:
- potatoes (cut into ½ inch cubes) - 8 - 10 medium
- cream of mushroom soup - 1 can
- milk - 1 1/2 cups
- dry ranch dressing mix - 1 envelope
- shredded cheddar cheese, divided - 2 cups
- salt and pepper - to desired taste
- bacon (cooked crisp, crumbled) - 6 slices
Instructions:
Place potatoes in a large pan, cover with water, bring to a boil over high heat. Cook for 10 - 12 minutes or until potatoes are almost tender; drain. Place potatoes in a greased 13 × 9 inch casserole dish.
In a bowl, mix together soup, milk, ranch dressing, 1 cup cheese, salt and pepper. Pour mixture over potatoes. Sprinkle 1 cup cheese and bacon over the top.
Bake uncovered in a preheated 350 degree oven for 25 - 30 minutes or until potatoes are tender.
