Roasted Carrots
Ingredients:
- baby carrots - 1 - 2 pounds
- olive oil - for pan
- salt and pepper - to desired taste
- olive oil - 2 T
- honey - 3 T
- balsamic vinegar - 1 t
Instructions:
Pour a little olive oil on baking sheet, place carrots in a single layer on baking sheet, season with salt and pepper. Roast in a preheated 400 degree oven for about 20 minutes. In a bowl, combine 2 T olive oil, honey and balsamic vinegar, drizzle over carrots. Return to the oven for 5 minutes to achieve sweet, salty, slightly cruchy taste.
