Roasted Prosciutto Wrapped Asparagus Spears
Ingredients:
- asparagus spears - 24
- water - 1/4 cup
- prosciutto - 1/2 pound
- grated parmesan cheese - 1/2 cup
Instructions:
Cut each slice of prosciutto in half lengthwise. Trim asparagus evenly, place in boiling water in a large roasting pan, cover tightly with foil. Stream asparagus for 10 - 15 minutes, until tender. Remove asparagus, dry on paper towels. Drain water from roasting pan and dry.
Cover work surface with waxed paper. Lay 1 slice of prosciutto on waxed paper, sprinkle 1 tsp Parmesan cheese. Place one asparagus spear at one end and roll up, slightly overlapping proscuitto as you roll, cover most of the spear. Repeat with remaining asparagus, prosciutto and cheese.
Place asparagus in roasting pan, roast in preheated 400 degree oven for 10 minutes, just until prosciutto just begins to brown.
