Roasted Vegetable Fries
Instructions:
vegetables of choice carrots, zucchini, peppers, green beans, sweet potatoes, etc
Cut vegetables into 3 inch sticks, making sure they are even in thickness.
Line baking pan with parchment paper; coat with olive oil. Lightly toss vegetable strips with a tablespoon olive oil.
Season with your choice of seasonings such as salt and pepper, paprika, cumin, cayenne, crushed red peppers, thyme, rosemary, sage, premixed spices Italian, Mexican, Old Bay, etc
Spread seasoned vegetables on baking pan. Roast in a preheated 425 degree oven for 20 minutes until golden and slightly browned on edges. Toss halfway through roasting time.
