Shoestring Potatoes
Ingredients:
- Idaho potatoes, peeled - 3 pounds
- peanut oil - for frying
- salt - to desired taste
Instructions:
Slice potatoes into 4 inch lengths, with a mandoline, cut potatoes 1/16 x 1/16 inch, then place in a large glass bowl, cover with cold water.
Heat 4 inches of oil in a heavy bottomed pot, over medium high heat to 375 degrees. Drain potatoes and dry potatoes thoroughly with paper towels. Fry potatoes in small batches until crisp and golden, about 3 minutes per batch. Drain on paper towels, sprinkle with salt; serve warm.
