Smashed Potatoes
Ingredients:
- potatoes - 12 small round
- Olive oil - 3 T
- Kosher salt - to desired taste
- black pepper - to desired taste
- Herbs of choice, chives, thyme, etc - to desired taste
Instructions:
Bring a pan of salted water to a boil. Add potatoes, cook until potatoes are fork-tender.
Generously drizzle olive oil over a sheet pan. Place potatoes on the pan, leave plenty of room between each potato. Using a potato masher, gently press down each potato until it slightly mashes, rotate the potato masher 90 degrees and mash again. Brush the tops of each crushed potato generously with olive oil.
Sprinkle kosher salt, pepper and herbs of choice over potatoes. Bake in a preheated 450 degree oven for 20 - 25 minutes until golden brown.
