Southwest Stuffed Peppers
Ingredients:
- lean ground turkey - 1/2 pound
- garlic, minced - 1 T
- chopped onion - 3 T
- cilantro - 2 T
- taco seasoning - 3 T
- chopped jalapeno pepper - 1/8 cup
- salt - to desired taste
- black beans, rinsed, drained - 15.25 ounce can
- tomatoes, drained, rinsed - 14 ounce can
- frozen corn - 3/4 cup
- bell peppers, cut in half lenghtwise - 3 green, red or yellow
- chicken broth - 1/3 cup
- shredded cheese, your choice - for garnish
- paprika - for garnish
Instructions:
In a skillet, over medium heat, brown turkey and season with salt. When thoroughly cooked, add onion, garlic, cilantro, jalapeno, black beans and tomatoes. Mix well, cover and simmer on low for 20 minutes. Add corn, simmer an additional 5 minutes or longer, until excess liquid evaporates. Season mixture with taco seasoning, combining well.
Place peppers, cut side up in an oven proof dish. Pour chicken broth into dish. Fill each pepper with turkey mixture. Cover dish with foil and bake in a preheated 350 degree oven for 45 - 50 minutes until peppers become tender. Remove foil, sprinkle shredded cheese on top, return to oven for 3 - 5 minutes, until cheese has melted. Garnish with paprika sprinkled over top.
