Spicy Hash Browns
Ingredients:
- russet potatoes, peeled, shredded, squeezed very dry - 2 pounds
- eggs, lightly beaten - 2
- flour - 2 T
- butter, melted - 2 T
- salt - 1 t
- sweet potato, peeled, shredded, and squeezed dry - 1 small
- green onions, sliced thin - 3
- cayenne pepper - 1/2 t
Instructions:
In large bowl, fold all ingredients together. Place 12 mounds on a greased baking sheet; flatten into patties. Spray patties with nonstick cooking spray. Bake in a preheated 450 degree oven for 15 - 20 minutes, until golden brown on the bottom. Turn patties over, bake an additional 15 minutes, until brown on the bottom.
Serve immediately. Can be baked 2 hours before serving and reheated in preheated 350 degree oven for 10 minutes.
