Squash Bake
Ingredients:
- yellow summer squash, sliced into rounds - 2
- zucchini, sliced into rounds - 2
- olive oil - 2 - 3 T
- bread crumbs - 1/3 cup
- grated sharp cheddar cheese - 1/3 cup
- salt - 1/2 t
- pepper - 1/2 t
- oregano - 1 t
- parsely - 1 t
- rosemary - 1 t
Instructions:
Toss squash and zucchini with olive oil. In another bowl, combine bread crumbs, cheddar, salt and pepper. Place half of the squash in a greased casserole dish and sprinkle with half the cheese mixture, repeat layers.
Bake in a preheated 350 degree oven for 30 - 40 minutes until cheese is melted and crumbs are brown. Sprinkle herbs over top and serve.
