Stuffed Potatoes
Ingredients:
- russet potatoes - 6
- sour cream - 1/4 cup
- butter - 3 T
- onion powder - 1/4 t
- salt - 1/2 t
- black pepper - 1/4 t
- paprika -
- chopped scallions or chopped parsley - for garnish
Instructions:
Pierce potatoes, bake in a preheated 400 degree oven for 55 minutes or until tender, cool slightly. Slice 1/2 inch off the top of each potato an scoop out pulp, leave 1/4 inch thick potato shell.
Place pulp in a bowl, add sour cream, butter, onion powder salt and pepper, mix until smooth. Spoon mixture into potato shell, sprinkle with paprika. Return potatoes to the oven, bake for 30 minutes until tops are brown. Remove from oven, garnish with chopped scallions or parsley. Serve immediately.
