Sweet Potato Crisps
Ingredients:
- sweet potatoes - 2
- liquid egg whites - 1/2 cup
- Parmesan cheese - 1 cup
- rosemary - 1/2 t
- pepper - 1/4 t
Instructions:
Peal and grate the sweet potatoes. Squeeze the potatoes to remove moisture from them. The more moisture you remove, the crispier they get in the oven.
In a bowl combine potatoes, egg whites, cheese, pepper and rosemary, mix until combined. Form potato mixture into patties as thin as possible, place on a greased wire rack. Place wire rack over cookie sheet.
Bake in a preheated 425 degree oven for 25 - 30 minutes or until potatoes are dark around the edges and crispy. Serve plain or with dip of your choice.
