Sweet Potato Pancakes
Ingredients:
- coconut oil, divided - 2 T
- cold mashed sweet potatoes - 1 cup
- apple, peeled, grated - 1
- egg - 1
- cinnamon - 1 t
- potato starch - 5 T
- salt - 1/4 t
- yogart, chopped apples, cinnamon - for topping
Instructions:
Combine sweet potatoes, apple, egg, cinnamon, potato starch and salt, divide mixture into fourths. Heat 2 T oil in a skillet over medium heat add 2 cakes cook until a brown crust is formed (about 5 minutes). Flip and flatten a little. Cook for an additional 3 - 5 minutes, then remove from heat. Add 1 T coconut oil to skillet, cook remaining 2 pancakes.
Serve with a dollop of yogurt, chopped apples and sprinkle of cinnamon.
