Tomato Pie
Ingredients:
- pie crust - 1 - 9 inch
- tomatoes - 4 medium
- salt - 1 t
- chopped basil leaves - 8 - 10
- bacon, cooked, chopped - 3 - 4 slices - to desired taste
- chopped jalapeno pepper, opitional - 1
- green onions, chopped - 3
- salt and pepper - to desired taste
- grated cheddar cheese - 1 cup
- grated mozzarella cheese - 1 cup
- mayonnaise - 1 cup
Instructions:
Slice tomatoes, lay in a colander and sprinkle salt over them, let them drain for 20 - 30 minutes. Bake pie crust for 10 minutes.
Place tomatoes in pie crust, top with basil leaves. Add bacon, jalapeno pepper, onions, salt and pepper to taste.
In a bowl, mix together cheddar cheese, mozzarella cheese and mayonnaise, spread evenly over pie.
Bake in a preheated 350 degree oven for 30 minutes. Serve hot.
